2 cups whole milk (or 1 1/2 cups milk plus 1/2 cup cream for extra richness)
2 tablespoons unsweetened cocoa powder
2 ounces dark chocolate, finely chopped
2 tablespoons granulated sugar
1 tablespoon cornstarch (or arrowroot for a gluten-free option)
1/4 teaspoon salt
1/2 teaspoon vanilla extract
Optional toppings: whipped cream, shaved chocolate, or a light dusting of cocoa powder
Instructions
Make a smooth slurry by whisking the cornstarch with 2 tablespoons of cold milk to form a smooth slurry.
In a heavy-bottom saucepan, combine the remaining milk, cocoa powder, and sugar. Heat over medium-low, whisking constantly, until warm and cocoa is dissolved.
Add the chopped dark chocolate to the warm milk. Stir gently until melted and homogeneous.
Pour in the cornstarch slurry while whisking. Simmer for 3–5 minutes until it coats the back of a spoon.
Remove from heat and whisk in the vanilla extract and salt. Adjust sweetness if desired.
Ladle into warm mugs. Top with whipped cream, shaved chocolate, or cocoa. Serve immediately.
If you have leftovers, reheat gently on the stove over low heat, adding a splash of milk if needed.
