A deliciously creamy and slightly spicy Thai Coconut Red Lentil Soup that’s vegan-friendly and quick to prepare, perfect for a comforting meal.

  • 1 cup red lentils
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the red lentils under cold water and set aside.
  2. In a large pot, sauté the onion, garlic, and ginger until softened.
  3. Add the curry powder and stir for a minute.
  4. Pour in the vegetable broth and bring to a boil.
