  • 2 cups (480 ml) shredded cheddar cheese
  • 1 cup (240 ml) milk
  • 1 cup (150 g) diced tomatoes
  • ½ cup (50 g) chopped cilantro
  • ½ cup (120 ml) sour cream
  • 1 cup (100 g) crushed tortilla chips

Instructions

  1. Bring a large pot of salted water to a rolling boil.
  2. Add elbow macaroni and stir occasionally to prevent sticking.
  3. Cook pasta until al dente, about 7-8 minutes, then drain.
  4. Reserve a cup of pasta water for later use.
  5. Heat olive oil in a large skillet over medium heat.
  6. Add ground beef or turkey, breaking it apart as it cooks.
  7. Cook meat for 5-7 minutes until no longer pink, then drain fat.
  8. Sprinkle in taco seasoning and mix well with the meat.
  9. Add a splash of reserved pasta water to help spices adhere.
  10. Lower heat and add cooked pasta to the skillet with meat.
  11. Pour in milk and stir gently to combine, then add shredded cheese.
  12. Stir until cheese melts into a creamy sauce, adjusting with pasta water if needed.
