2 lbs (900g) potatoes, peeled and chopped
1/3 cup (80ml) milk
1/4 cup (60g) unsalted butter
2 egg yolks
Salt and pepper to taste
1/4 cup grated Parmesan (optional)
1 tbsp olive oil
1 small onion, finely chopped
1 garlic clove, minced
1 lb (450g) ground beef
Salt and pepper to taste
1/2 tsp paprika or chili powder (optional)
1/3 cup tomato sauce or passata
1 cup shredded mozzarella or cheddar cheese
Fresh parsley or chives, for garnish
Replace beef with mushrooms or lentils for a hearty meat-free version.
Instructions
Boil potatoes in salted water for 15–20 minutes until tender. Drain, mash with butter and warm milk, then add egg yolks, salt, pepper, and Parmesan if desired. Cool slightly.
Preheat oven to 400°F (200°C). Grease a muffin tin. Spoon or pipe mashed potatoes into cups, pressing against sides to form a nest. Bake 20 minutes until lightly golden.
In a skillet, heat olive oil. Sauté onion and garlic, add ground beef, and cook until browned. Season with salt, pepper, paprika, and stir in tomato sauce. Simmer until thick.
Fill baked potato nests with beef mixture. Top with shredded cheese.
Return to oven for 5–10 minutes until cheese is melted and bubbly.
Garnish with parsley or chives. Enjoy warm as a side or main dish.
