A classic Strawberry Shortcake featuring fluffy vanilla cakes layered with sweet strawberries and delicate whipped cream.

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups fresh strawberries, sliced
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a bowl, combine flour, baking powder, and salt; whisk to mix.
  3. Cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. Gradually add flour mixture to butter mixture, alternating with milk; stir until just combined.
  6. Pour the batter into prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Cool the cakes in the pans on a wire rack.
  9. Whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  10. Layer one cake on a serving plate, top with whipped cream and half of the strawberries.
  11. Add the second cake layer and repeat with more whipped cream and strawberries. Serve and enjoy!
