  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup homemade strawberry jam
  • 2 cups fresh strawberries, sliced
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup strawberry puree

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until evenly combined.
  3. Add eggs, milk, oil, and vanilla to the dry mixture. Mix until fully combined.
  4. Cautiously stir in the boiling water until thin batter forms.
  5. Pour the batter evenly into prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  7. Beat cream cheese and butter until creamy, then gradually add powdered sugar and strawberry puree until combined.
  8. Layer the first cake with strawberry jam and sliced strawberries. Top with second cake layer and frost with cream cheese frosting.
  9. Decorate with additional sliced strawberries before serving.
