  • 1/2 cup (100 g) granulated sugar
  • 1 cup (150 g) fresh strawberries
  • 1 tsp vanilla extract
  • 8 large flour tortillas
  • 2 cups (480 ml) vegetable oil
  • 1/2 cup (100 g) powdered sugar
  • 1 tsp ground cinnamon

Instructions

  1. Place softened cream cheese in a mixing bowl.
  2. Beat the cream cheese until smooth and creamy.
  3. Gradually mix in granulated sugar until fully incorporated.
  4. Fold in diced fresh strawberries until evenly distributed.
  5. Add vanilla extract and mix to elevate the flavor.
  6. Set the filling aside to meld flavors while preparing tortillas.
  7. Lay a tortilla flat and spoon filling into the center.
  8. Fold the sides over the filling and roll tightly from the bottom.
  9. Repeat for remaining tortillas and place seam-side down.
  10. Heat vegetable oil in a skillet to 350°F (175°C).
  11. Fry chimichangas for 2-3 minutes on each side until golden-brown.
  12. Roll warm chimichangas in a mixture of powdered sugar and cinnamon.
