A rich and moist black velvet cake topped with tangy blackberry compote and dark cocoa frosting, perfect for Halloween celebrations.

  • 2 cups All-purpose flour (sifted)
  • 3/4 cup Black cocoa powder (sifted)
  • 2 tsp Baking soda
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 2 Eggs (room temperature)
  • 1 cup Buttermilk (room temperature)
  • 1 cup Coffee (hot)
  • 1/2 cup Canola oil
  • 2 tsp Vanilla extract
  • 2 cups Fresh blackberries
  • 2 tbsp White granulated sugar
  • 1 tbsp Fresh lemon juice
  • 1 tsp Lemon zest
  • 1 Cinnamon stick
  • 1/4 cup Water
  • 1 tbsp Cornstarch
  • 8 oz Cream cheese (softened)
  • 1/2 cup Unsalted butter (softened)
  • 3 cups Powdered sugar (sifted)
  • 1 cup Black cocoa powder (sifted)
  • 1/4 tsp Salt
  • 1 tsp Vanilla extract
  • Chocolate skulls (for garnish)
  • Fresh blackberries (for garnish)
  • Dried rose petals (for garnish)

Instructions

  1. Preheat your oven to 350°F (about 175°C) and grease your baking pans.
  2. In a large bowl, whisk together the sugar, flour, black cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, combine the eggs, buttermilk, hot coffee, canola oil, and vanilla extract.
  4. Mix the wet and dry ingredients until just combined.
  5. Pour the batter evenly into prepared pans and bake for about 30-35 minutes until a toothpick comes out clean. Let them cool.
  6. For the blackberry compote, combine blackberries, sugar, lemon juice, lemon zest, cinnamon stick, and water in a saucepan; cook until bubbly (about 10-15 minutes) and mash the berries.
  7. Stir in cornstarch mixed with a spoon of water, allowing it to thicken. Set aside to chill.
  8. For the frosting, cream the cream cheese and butter until fluffy, then mix in the powdered sugar, black cocoa powder, salt, and vanilla until smooth.
  9. To assemble, layer the cake, spreading compote and frosting between each layer. Decorate with chocolate skulls, blackberries, and rose petals.
  10. Slice and serve to your guests, enjoying the spooky spirit!
