  • 1 pound (450g) dried green split peas, rinsed and sorted
  • 1 meaty ham bone or 2 cups diced cooked ham
  • 1 onion, diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups (1.5 liters) chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • Chopped parsley, for garnish (optional)

Instructions

  1. Stovetop Method: Heat 1 tablespoon oil in a large pot. Sauté onion, carrots, celery, and garlic for 5–6 minutes until fragrant.
  2. Add Base Ingredients: Stir in the split peas, ham bone (or diced ham), thyme, bay leaf, and chicken broth.
  3. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5–2 hours, stirring occasionally, until the peas are soft and have broken down.
  4. Remove Bone: If using a ham bone, carefully remove it from the pot. Shred any meat from the bone and return the meat to the soup.
  5. Season & Serve: Taste the soup and add salt and black pepper as needed. Ladle the split pea ham soup into bowls and garnish with chopped parsley if desired.
  6. Crockpot Method: Add all ingredients to a 6-quart slow cooker.
  7. Cook: Cook on low for 8 hours or on high for 5–6 hours.
  8. Finish: Stir the soup well, season to taste with salt and pepper, and serve warm.

Notes

  • No soaking is required for split peas; simply rinse them before cooking.
  • Using a meaty ham bone will provide maximum flavor and richness.
  • Add salt at the end of cooking to prevent the split peas from toughening.
  • For a vegetarian version, omit the ham and use vegetable broth, adding smoked paprika or a splash of liquid smoke for flavor.
  • Store leftover split pea ham soup in an airtight container in the refrigerator for up to 4 days, or freeze portions for up to 3 months.
