Delightful flat bagels made with fresh spinach and creamy cottage cheese, perfect for breakfast or brunch.

  • 1 cup cottage cheese
  • 1 cup fresh spinach, chopped
  • 1 egg
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon olive oil (for brushing)
  • Sesame seeds or Everything Bagel seasoning (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine cottage cheese, chopped spinach, and egg; mix until well combined.
  3. In a separate bowl, whisk together flour, baking powder, salt, and garlic powder (if using).
  4. Add the dry ingredients to the wet mixture and stir until a sticky dough forms.
  5. Divide the dough into 4 equal portions, flatten each into a disc, and poke a hole in the center.
  6. Brush the tops with olive oil and sprinkle with sesame seeds or Everything Bagel seasoning.
  7. Bake for 20–25 minutes, or until golden brown and cooked through.
  8. Let them cool slightly before serving.
