Southern Stewed Potatoes are a warm, nostalgic comfort food made with tender chunks of potato simmered in a thick, buttery broth.

Ingredients

  • pounds Yukon gold or red potatoes, peeled and cut into large chunks
  • 3 cups water (or just enough to barely cover the potatoes)
  • 3 tablespoons unsalted butter
  • Salt and black pepper, to taste
  • Optional: ½ teaspoon onion powder or garlic powder
  • Optional: Fresh chopped parsley or chives for garnish
  • Substitute butter with olive oil or plant-based margarine

Instructions

  1. Peel and cut potatoes into large chunks. Yukon golds or red potatoes work best for creamy texture.
  2. Add potatoes to a pot and cover barely with water. Bring to a boil, then reduce to a simmer. Cook uncovered for 20–25 minutes, stirring occasionally.
  3. Once tender, stir in butter until melted. Season generously with salt and black pepper.
  4. Add onion or garlic powder, or stir in green onions before serving.
  5. Spoon into bowls and garnish with parsley or chives. Serve with fried chicken, baked ham, or cornbread.
