4 cups all-purpose flour
1 ½ cups warm water (110°F)
2 ¼ tsp active dry yeast
1 tbsp sugar
1 tsp salt
⅔ cup baking soda (for boiling water)
4 tbsp unsalted butter, melted
Coarse salt for topping
Instructions
In a large bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
Stir in flour and salt until a dough forms. Knead for 5–8 minutes until smooth and elastic.
Cover and let rise in a warm place for 1 hour or until doubled in size.
Punch down dough and divide into 8 equal portions. Roll each into a 20-inch rope and form the pretzel shape.
Preheat oven to 425°F (220°C). Line baking sheets with parchment paper.
Bring 10 cups of water and baking soda to a gentle boil. Drop pretzels in for 20–30 seconds, then remove and place on prepared sheets.
Bake for 12–15 minutes until golden brown.
Brush warm pretzels with melted butter and sprinkle with coarse salt. Serve warm or store for later.
