Mouthwatering Slow Cooker Italian Beef Recipe for Easy Low Carb Meals

Ingredients

  • 34 lbs chuck roast (trimmed of excess fat)
  • 1 tbsp olive oil
  • 1 jar (12–16 oz) pepperoncini peppers (with juice)
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp crushed red pepper flakes (optional)
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 cup low-sodium beef broth
  • ¼ cup chopped roasted red peppers (optional)
  • ½ onion, thinly sliced

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear roast 2–3 minutes per side until browned.
  2. Place roast in the slow cooker and pour in beef broth and pepperoncini (with juice).
  3. Sprinkle with Italian seasoning, garlic powder, onion powder, salt, pepper, and red pepper flakes. Add sliced onions and roasted red peppers.
  4. Cover and cook on low for 8–10 hours or high for 4–5 hours, until the beef is fork-tender.
  5. Remove beef, shred with two forks, then return to the juices for 15 minutes before serving. Serve warm.

  • Great for meal prep or sandwiches.
  • Can be served with lettuce wraps for a low-carb option.
