Mouthwatering Slow Cooker Italian Beef Recipe for Easy Low Carb Meals

- 3–4 lbs chuck roast (trimmed of excess fat)
- 1 tbsp olive oil
- 1 jar (12–16 oz) pepperoncini peppers (with juice)
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp crushed red pepper flakes (optional)
- 1 tsp sea salt
- ½ tsp black pepper
- 1 cup low-sodium beef broth
- ¼ cup chopped roasted red peppers (optional)
- ½ onion, thinly sliced
- Heat olive oil in a large skillet over medium-high heat. Sear roast 2–3 minutes per side until browned.
- Place roast in the slow cooker and pour in beef broth and pepperoncini (with juice).
- Sprinkle with Italian seasoning, garlic powder, onion powder, salt, pepper, and red pepper flakes. Add sliced onions and roasted red peppers.
- Cover and cook on low for 8–10 hours or high for 4–5 hours, until the beef is fork-tender.
- Remove beef, shred with two forks, then return to the juices for 15 minutes before serving. Serve warm.
