A hearty and comforting slow cooker casserole featuring layers of ground beef, beans, corn, and crispy tater tots topped with melted cheese.

  • 1 lb ground beef
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilis
  • 1 package (30 oz) frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef with chopped onion and minced garlic in a skillet over medium heat until cooked through. Drain any excess fat.
  2. In a slow cooker, combine the cooked beef mixture with corn, black beans, diced tomatoes, chili powder, cumin, and a sprinkle of salt and pepper. Mix well.
  3. Layer the frozen tater tots evenly on top of the mixture in the slow cooker.
  4. Cover and cook on low for 4-6 hours until the tater tots are crispy.
  5. In the last 30 minutes, sprinkle shredded cheddar cheese over the tater tots and cover to melt.
  6. Serve warm and enjoy!
