1 lb ground beef
1 can (15 oz) corn, drained
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilis
1 package (30 oz) frozen tater tots
1 cup shredded cheddar cheese
1 onion, chopped
2 cloves garlic, minced
1 tsp chili powder
1 tsp cumin
Salt and pepper to taste
Instructions
Brown the ground beef with chopped onion and minced garlic in a skillet over medium heat until cooked through. Drain any excess fat.
In a slow cooker, combine the cooked beef mixture with corn, black beans, diced tomatoes, chili powder, cumin, and a sprinkle of salt and pepper. Mix well.
Layer the frozen tater tots evenly on top of the mixture in the slow cooker.
Cover and cook on low for 4-6 hours until the tater tots are crispy.
In the last 30 minutes, sprinkle shredded cheddar cheese over the tater tots and cover to melt.
