  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 lb shrimp, cooked and chopped small
  • 1/2 cup sharp cheddar or Parmesan cheese, grated
  • 2 tablespoons fresh lemon juice
  • 12 teaspoons hot sauce or a pinch of paprika
  • 2 tablespoons finely chopped chives or green onions
  • 2 tablespoons chopped fresh dill
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup finely diced red bell pepper or scallions for color and sweetness

Instructions

  1. Preheat your oven to 350°F (175°C) if you’re baking the dip for a warm, bubbly finish. If you prefer it cold or merely chilled, you can skip the oven and chill the mixture until ready to serve.
  2. In a large bowl, beat the softened cream cheese until smooth.
  3. Stir in the sour cream and mayonnaise until glossy and homogeneous.
  4. Fold in the chopped shrimp, grated cheese, and fresh herbs (dill and chives).
  5. Add lemon juice, hot sauce or paprika, and a pinch of salt and pepper. Taste and adjust the tang and heat to suit your crowd’s preferences.
  6. Transfer the mixture to a small baking dish or cast-iron skillet.
  7. Bake for 15–20 minutes, or until the edges are bubbling and the top is lightly browned. If you like a deeper toast on top, broil for 1–2 minutes at the end.
  8. Remove from the oven and let Shrimp Dip rest for 5 minutes.
  9. Garnish with extra dill or chives and a final squeeze of lemon.
  10. Serve warm with an assortment of dippers.
  11. No-bake version: skip baking and refrigerate the base for at least 2 hours before serving.
