This savory Caprese bread recipe combines the classic Italian flavors of tomato, mozzarella, and basil into a delicious, easy-to-make quick bread. Perfect as an appetizer, side dish, or snack, it bakes up golden brown and is wonderful served warm.

  • ½ cup whole milk
  • ¼ cup olive oil
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¾ cup shredded mozzarella cheese
  • ⅓ cup chopped sun‑dried tomatoes (in oil, drained)
  • ¼ cup chopped fresh basil
  • Optional: pinch of black pepper or red pepper flakes

Instructions

  1. Preheat your oven to 350 °F (175 °C). Grease and line an 8×4‑inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the eggs, milk, olive oil, and yogurt (or sour cream) until smooth.
  3. In another bowl, mix the flour, baking powder, salt, and garlic powder.
  4. Add the dry mixture into the wet mixture and stir gently until just combined.
  5. Fold in the mozzarella, sun‑dried tomatoes, and basil (and optional pepper or red pepper flakes).
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  8. Let the loaf rest in the pan for about 10 minutes, then transfer to a wire rack to cool.
  9. Slice and serve either warm or at room temperature.
