Samoa Cheesecake is a rich caramel coconut dessert inspired by the famous Girl Scout cookies. It combines a buttery cookie crust, creamy cheesecake filling, and a toasted coconut-caramel topping drizzled with chocolate for a decadent treat.

Ingredients

  • 2 cups crushed shortbread or graham cracker crumbs
  • 6 tablespoons melted butter
  • Pinch of salt
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon pure vanilla extract
  • 2 cups shredded coconut, toasted
  • 1 cup soft caramels
  • 3 tablespoons heavy cream
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine crushed cookies, melted butter, and a pinch of salt. Press the mixture into a 9-inch springform pan to form the crust.
  3. Bake the crust for 10 minutes, then cool while preparing the filling.
  4. Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla and sour cream until combined.
  5. Pour batter over cooled crust and smooth the top.
  6. Place the pan in a water bath and bake for 55–60 minutes until edges are set and the center is slightly jiggly.
  7. Cool the cheesecake gradually in the oven with the door open, then refrigerate for at least 4 hours or overnight.
  8. Toast shredded coconut in a skillet until golden brown.
  9. Melt caramels with heavy cream until smooth, then mix in toasted coconut. Spread over the chilled cheesecake.
  10. Melt chocolate chips and drizzle over the top. Chill again until ready to serve.

  • Chilling overnight enhances the flavors.
