Ingredients
Scale
1 (11 ounce) bag Rolo candies, unwrapped
1 (13.7 ounce) box Ritz crackers
1 (12 ounce) bag chocolate chips (milk chocolate or semi-sweet)
1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
Instructions
Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper.
Lay out half of the Ritz crackers on the prepared baking sheet.
Place one unwrapped Rolo candy on top of each Ritz cracker.
Bake for 3-5 minutes, or until the Rolo candies are softened but not completely melted. Watch them closely.
Remove the baking sheet from the oven. Immediately place another Ritz cracker on top of each softened Rolo, gently pressing down to create a sandwich and spread the caramel.
Let the Rolo stuffed Ritz crackers cool completely. You can place them in the refrigerator for 15-20 minutes to speed this up.
While the Rolo Ritz treats are cooling, melt the chocolate chips. You can do this in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth. If using, stir in the coconut oil or shortening for a smoother coating.
Dip each cooled Rolo Ritz cookie into the melted chocolate, ensuring it’s fully coated. Use a fork to lift it out, allowing excess chocolate to drip off.
Place the chocolate-covered Rolo Ritz cookies back on the parchment-lined baking sheet.
Optionally, sprinkle with sea salt or sprinkles immediately after dipping.
Refrigerate for at least 30 minutes, or until the chocolate has set completely.
Enjoy your homemade Rolo Ritz candy! Store these sweet and salty Rolo Ritz cookies in an airtight container at room temperature or in the refrigerator.
Notes
Use fresh Ritz crackers for the best texture in your Rolo Ritz cracker cookies.
Do not overbake the Rolo candies; they just need to be soft enough to press.
If your chocolate becomes too thick while dipping, reheat it gently.
For a quick Rolo Ritz snack, you can skip the chocolate coating, but the chocolate adds a wonderful layer of flavor to your Rolo and Ritz cracker treats.
These Rolo Ritz cookies are perfect for parties or a simple Rolo Ritz dessert.
