  • 1 whole duck (about 56 lbs)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or melted butter (for roasting)
  • 1 onion, quartered (optional, for flavor)
  • 23 garlic cloves, crushed (optional, for flavor)
  • 12 sprigs fresh rosemary or thyme (optional)
  • 1 orange, quartered (optional, for added citrus flavor)
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon ground ginger
  • 1 tablespoon fresh orange juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Remove any giblets and pat the duck dry. Season generously with salt and pepper. Stuff the cavity with optional aromatics like onion, garlic, rosemary, and orange quarters.
  3. Place the duck breast side up on a roasting rack in a roasting pan. Brush with olive oil or melted butter and roast for 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Baste every 30 minutes with its own fat.
  4. In a small saucepan, combine honey, soy sauce, balsamic vinegar, ground ginger, and orange juice. Simmer for 5-7 minutes until the glaze thickens.
  5. During the last 15 minutes of roasting, brush the duck with the glaze and continue roasting until the skin is golden and crispy.
  6. Let the duck rest for 10-15 minutes before carving. Serve with your favorite sides for a beautiful and flavorful Christmas dinner.
