2 large boneless chicken breasts (pounded to even thickness)
1 cup whole milk ricotta cheese
1/2 teaspoon garlic powder
1 teaspoon lemon zest
2 tablespoons olive oil
Salt & pepper to taste
Instructions
Preheat oven to 375°F.
Season chicken breasts with salt, pepper, and garlic powder.
Heat olive oil in an oven-safe skillet over medium heat.
Sear chicken for 3–4 minutes per side until lightly browned.
In a bowl, mix ricotta cheese, lemon zest, and a pinch of salt.
Spread ricotta mixture evenly over the seared chicken breasts.
Transfer skillet to the oven and bake for 15–18 minutes, or until internal temperature reaches 165°F.
