This Southwestern Chicken Salad is a high-protein powerhouse packed with grilled chicken, black beans, corn, creamy avocado, and a zesty lime dressing.

Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 4 cups romaine lettuce or mixed greens
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1 tablespoon honey or agave
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste

Instructions

  1. Cook and shred the chicken. Rinse and drain black beans. Dice bell pepper, onion, and avocado, then shred the lettuce.
  2. In a small bowl or jar, whisk together olive oil, lime juice, honey, chili powder, cumin, salt, and pepper until emulsified.
  3. In a large bowl, combine chicken, beans, corn, bell pepper, onion, avocado, and greens. Drizzle with dressing and toss gently.
