2 cups cooked chicken breast, shredded or chopped
1 can (15 oz) black beans, rinsed and drained
1 cup corn kernels (fresh or canned)
1 red bell pepper, diced
1/2 red onion, finely chopped
1 avocado, diced
1/4 cup chopped cilantro
4 cups romaine lettuce or mixed greens
2 tablespoons olive oil
Juice of 1 lime
1 tablespoon honey or agave
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper, to taste
Instructions
Cook and shred the chicken. Rinse and drain black beans. Dice bell pepper, onion, and avocado, then shred the lettuce.
In a small bowl or jar, whisk together olive oil, lime juice, honey, chili powder, cumin, salt, and pepper until emulsified.
In a large bowl, combine chicken, beans, corn, bell pepper, onion, avocado, and greens. Drizzle with dressing and toss gently.
