A cozy, weeknight soup that pairs tender dumplings with a fragrant ginger-garlic broth, ready in about 20 minutes.

Ingredients

  • Dumplings (potstickers) — frozen or fresh
  • 4 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 cups mixed greens (spinach or baby bok choy)
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Warm a large pot over medium heat and add the sesame oil.
  2. Add minced garlic and grated ginger. Sauté briefly until fragrant, about 30–45 seconds — avoid browning.
  3. Pour in the broth and soy sauce, then bring the liquid to a gentle simmer.
  4. Add the dumplings and cook according to the package directions; they’re done when they float and the filling reaches a safe internal temperature.
  5. Stir in the mixed greens and cook 2–3 minutes until just wilted.
  6. Taste and season with salt and pepper. Ladle into bowls and garnish with chopped green onions.
