  • 1 lb ground beef (85/15 recommended)
  • 4 medium russet or Yukon Gold potatoes, peeled and diced
  • 1 cup shredded sharp cheddar cheese
  • 3 cups chicken or beef broth (low sodium)
  • 1 cup milk or heavy cream
  • 1 medium onion, diced
  • 2 celery stalks, chopped
  • 1 medium carrot, diced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Optional toppings: bacon bits, green onions, chopped pickles, parsley

Instructions

  1. In a large soup pot, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add diced onion, celery, and carrot to the pot. Sauté for 5–7 minutes until softened and fragrant.
  3. Stir in diced potatoes and pour in the broth. Bring to a gentle boil, then reduce heat and simmer for 12–15 minutes until potatoes are tender.
  4. In a small pan, melt butter and whisk in flour to make a roux. Cook for 1–2 minutes, then stir it into the soup to thicken.
  5. Reduce heat to low. Gradually stir in shredded cheddar cheese until melted and smooth.
  6. Pour in milk or cream, stirring constantly to create a creamy texture. Do not boil after adding dairy.
