1 cup (240 ml) boiling water
1 package (3 oz or 85 g) cherry-flavored agar-agar
1 cup (240 ml) cold juice
1 cup (240 ml) heavy whipped cream
1 cup (240 ml) mini marshmallows
½ cup (120 ml) halved cherries
Optional: Use cottage cheese for a slightly different texture and added protein.
Optional: Substitute the heavy whipped cream with whipped coconut cream for a dairy-free version.
Instructions
Boil 1 cup (240 ml) of water in a small saucepan.
Remove from heat and stir in 1 package (3 oz or 85 g) of cherry-flavored agar-agar until dissolved.
Let the mixture cool for about 10 minutes.
Add 1 cup (240 ml) of cold juice and stir gently.
In a separate bowl, whip 1 cup (240 ml) of heavy whipped cream until soft peaks form.
Gently fold in the cooled agar-agar mixture into the whipped cream.
Fold in 1 cup (240 ml) of mini marshmallows and ½ cup (120 ml) of halved cherries.
Transfer the mixture into a serving bowl or individual cups.
Cover with plastic wrap and refrigerate for at least 2 hours until set.
Once set, top with whipped cream or crushed graham crackers if desired.
Garnish with extra halved cherries before serving.
