This pesto grilled cheese sandwich delivers melty cheese, crispy bread, and basil in a quick, easy recipe for comforting meals.

  • 2 slices sturdy bread (sourdough or country loaf)
  • 2 to 3 tablespoons pesto
  • 4 to 6 thin slices fresh mozzarella cheese
  • 1 to 2 tablespoons grated parmesan or pecorino
  • 1 to 2 tablespoons butter (for toasting)
  • Olive oil for toasting (optional)
  • 2 thin tomato slices (optional)
  • 1 cup arugula or spinach, loosely packed (optional)
  • 2 to 3 slices roasted peppers (optional)
  • Pinch red pepper flakes (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 2 slices gluten-free bread (optional)

Instructions

  1. Set a skillet or cast-iron pan over medium heat to preheat as you assemble.
  2. Spread pesto on one side of each bread slice. If using greens, layer a few leaves on top of the pesto.
  3. Layer the cheese: place mozzarella slices on the pesto-covered side of one bread slice, then sprinkle parmesan on top. Add optional add-ins if using.
  4. Close the sandwich with the second bread slice, pesto side facing inward. Gently press down.
  5. Transfer the sandwich to the preheated pan. Cook for about 3-4 minutes until the bottom is deep golden brown.
  6. Flip carefully and cook for another 2-4 minutes on the other side, adjusting heat as needed.
  7. Test for doneness by pressing the sandwich gently; you want the cheese to ooze a touch when you cut into it.
  8. Remove from the pan and let it rest for 1–2 minutes before slicing.
  9. Cut diagonally and serve immediately.
