Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • ¾ cup milk
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the Pecan Topping:
  • ½ cup packed light brown sugar
  • ¼ cup all-purpose flour
  • ¼ cup cold unsalted butter, cut into small pieces
  • 1 cup chopped pecans
  • 2 tablespoons maple syrup or corn syrup

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or grease it thoroughly.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. This creates your dry base for homemade pecan pie muffins.
  3. In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined. Be careful not to overmix; a few lumps are okay for these pecan muffin recipes.
  5. In a small bowl, prepare the pecan topping. Combine the brown sugar and flour. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Stir in the chopped pecans and maple syrup. This makes a delicious pecan streusel topping.
  6. Divide half of the muffin batter evenly among the prepared muffin cups.
  7. Spoon about 1 tablespoon of the pecan topping over the batter in each cup.
  8. Top with the remaining muffin batter, dividing it evenly.
  9. Spoon the remaining pecan topping over the top of each muffin.
  10. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean. These mini pecan pie muffins bake beautifully.
  11. Allow the pecan pie muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Do not overmix the muffin batter; overmixing can lead to tough muffins.
  • Ensure your butter for the streusel topping is cold for a crumbly texture.
  • For extra flavor, lightly toast your pecans before chopping them.
  • Store leftover pecan pie muffins in an airtight container at room temperature for up to 3 days.
