Ingredients

Scale
  • 2 cups pecan halves
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Spread pecan halves on a baking sheet and toast for 5-7 minutes until fragrant. Let them cool.
  2. In a medium saucepan, combine sugar, corn syrup, and butter. Cook over medium heat, stirring until sugar dissolves.
  3. Bring the mixture to a boil and cook without stirring for 5-7 minutes, until it reaches the soft-ball stage (235-240°F or 113-116°C on a candy thermometer).
  4. Remove from heat and stir in vanilla extract.
  5. Add the toasted pecans to the caramel mixture and stir to coat evenly.
  6. Drop spoonfuls of the pecan caramel mixture onto parchment paper, forming clusters.
  7. Melt the semi-sweet and milk chocolate chips together in a double boiler or microwave in short intervals, stirring until smooth.
  8. Drizzle the melted chocolate over the caramel pecan clusters.
  9. Let the Pecan Caramel Chocolate Clusters set completely before serving.
