Ingredients
Scale
1 cup (240 g) creamy peanut butter
1 cup (200 g) brown sugar
1 large egg
1 cup (100 g) rolled oats
1/2 tsp baking soda
1/4 tsp salt
1/2 cup (90 g) chocolate chips or chopped nuts
1 tsp vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mix creamy peanut butter and brown sugar until smooth and cohesive.
Crack an egg into the bowl and add vanilla extract; whisk until fully combined.
Gently fold in rolled oats, baking soda, and salt until just combined.
Scoop tablespoon portions of dough and roll them into balls, placing them on the sheet.
Space the dough balls about two inches apart on the baking sheet.
Press chocolate chips or nuts into the tops of each ball, if desired.
Flatten each cookie with the back of a fork, creating a crisscross pattern.
Bake the cookies for 10-12 minutes until edges are golden and centers are soft.
Remove cookies from the oven and cool on the baking sheet for a few minutes.
Transfer cooled cookies to a wire rack to set their texture.
Store cookies in an airtight container at room temperature for up to a week.
