A fresh, vibrant, and elegant Pea Bruschetta made with sweet peas, mint, lemon, and cheese on crisp toasted bread. This easy appetizer is light, flavorful, and perfect for spring gatherings or brunch.

Ingredients

  • 2 cups fresh or frozen peas
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic
  • Zest and juice of 1 lemon
  • 2 tablespoons chopped fresh mint
  • 1/4 cup grated Parmesan or ricotta cheese
  • Salt and pepper to taste
  • 1 baguette or small sourdough loaf, sliced 1/2 inch thick
  • Extra olive oil for brushing bread
  • Optional: crumbled feta, prosciutto, or chili flakes for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Slice the baguette and lightly brush both sides with olive oil.
  2. Toast or grill bread slices for 5–7 minutes, turning once, until golden and crisp. Rub with a cut garlic clove while warm (optional).
  3. In a pot of boiling salted water, cook peas for 2–3 minutes until tender and bright green. Drain and place in ice water to stop cooking.
  4. In a food processor, combine peas, olive oil, garlic, lemon zest and juice, mint, and cheese. Pulse until smooth but still slightly chunky. Season with salt and pepper.
  5. Spread the pea mixture over toasted bread slices. Drizzle with olive oil and garnish with extra mint, cheese, or toppings of your choice.
  6. Serve immediately while bread is crisp and topping is fresh.
