  • 2 pounds red potatoes
  • 3 tablespoons olive oil
  • 1.5 cups grated Parmesan cheese (freshly grated)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. Wash and scrub the red potatoes, then chop them into 1-inch bite-sized chunks.
  2. Toss the cut potatoes in a mixing bowl with olive oil, salt, black pepper, garlic powder, and Italian herbs.
  3. Coat the potatoes thoroughly, then add some grated Parmesan cheese, reserving a bit for later.
  4. Spread the potatoes in a single layer on a large baking sheet.
  5. Roast in a preheated oven at 400°F (200°C) for 30-35 minutes, flipping halfway through.
  6. In the last 5 minutes of roasting, sprinkle reserved Parmesan cheese over the top.
