Ingredients

Scale
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon balsamic vinegar
  • 1 lb boneless, skinless chicken breasts or thighs, sliced or shredded
  • 1½ cups dry orzo pasta
  • 2½ cups chicken broth
  • ½ cup heavy cream or milk
  • 1½ cups shredded Gruyère or mozzarella cheese
  • Salt and black pepper, to taste
  • Optional garnish: fresh thyme or crispy fried onions

Instructions

  1. Heat butter and olive oil in an oven-safe skillet over medium heat. Add sliced onions and cook for 15–20 minutes, stirring occasionally, until golden and caramelized. Add thyme, garlic, and balsamic vinegar; cook for 1–2 minutes more.
  2. Stir in sliced or shredded chicken and season with salt and pepper. Cook briefly until browned.
  3. Stir in orzo, chicken broth, and cream. Mix to combine and bring to a gentle simmer.
  4. Sprinkle cheese evenly on top. Transfer skillet to a preheated 400°F oven and bake uncovered for 15–20 minutes, until bubbly and golden brown.
  5. Remove from oven and let rest for 5 minutes before serving. Garnish with fresh herbs or crispy onions if desired.
