1 cup all-purpose flour
2 tsp baking powder
2 tbsp granulated sugar
1/4 tsp salt
1 cup whole milk
1 large egg
2 tbsp melted butter
6 crushed Oreos
Instructions
In a large bowl, whisk together the flour, baking powder, sugar, and salt until combined.
In a separate bowl, beat the milk, egg, and melted butter until smooth and glossy.
Pour the wet mixture into the dry ingredients. Stir gently with a spatula just until combined — a few lumps are good for fluffier pancakes.
Fold in the crushed Oreos evenly, taking care not to overmix.
Heat a non-stick skillet or griddle over medium heat and lightly grease it. Scoop about 1/2 cup of batter per pancake onto the hot surface.
Cook until bubbles form on the surface and the edges look set, about 2 minutes. Flip and cook until the underside is golden brown, another 1–2 minutes.
Keep finished pancakes warm on a tray in a low oven while you finish the batch. Serve with maple syrup and extra crushed Oreos or whipped cream.
