One Pot Mac Chili combines two comfort food favorites—chili and mac and cheese—into one hearty, cheesy, and spicy meal made in under 30 minutes. Perfect for busy weeknights and cozy dinners.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 1/2 cups chicken broth
  • 1 (15 oz) can kidney beans, drained
  • 1 (15 oz) can petite diced tomatoes
  • 23 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1/3 cup brown sugar
  • Salt and pepper to taste
  • 10 oz elbow macaroni (uncooked)
  • 2 cups shredded cheddar cheese

Instructions

  1. In a 4-quart sauté pan, cook ground beef and diced onion over medium heat until beef is no longer pink and onions are soft.
  2. Add minced garlic and cook for 1 more minute.
  3. Pour in chicken broth, kidney beans, diced tomatoes, chili powder, cayenne, paprika, garlic powder, and brown sugar. Stir to combine and bring to a boil.
  4. Add uncooked elbow macaroni, reduce heat to a simmer, and cook uncovered for 12–15 minutes until pasta is tender and most of the liquid is absorbed.
  5. Turn off heat and stir in shredded cheddar cheese. Season with salt and pepper to taste.
  6. Garnish with parsley, sour cream, or your favorite toppings if desired. Serve hot.

Notes

  • Adjust the spice level by adding more or less cayenne pepper.
  • Feel free to add additional toppings like jalapeños or avocado.
