1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
3 1/2 cups chicken broth
1 (15 oz) can kidney beans, drained
1 (15 oz) can petite diced tomatoes
2–3 tbsp chili powder
1 tsp paprika
1 tsp garlic powder
1/2 tsp cayenne pepper
1/3 cup brown sugar
Salt and pepper to taste
10 oz elbow macaroni (uncooked)
2 cups shredded cheddar cheese
Instructions
In a 4-quart sauté pan, cook ground beef and diced onion over medium heat until beef is no longer pink and onions are soft.
Add minced garlic and cook for 1 more minute.
Pour in chicken broth, kidney beans, diced tomatoes, chili powder, cayenne, paprika, garlic powder, and brown sugar. Stir to combine and bring to a boil.
Add uncooked elbow macaroni, reduce heat to a simmer, and cook uncovered for 12–15 minutes until pasta is tender and most of the liquid is absorbed.
Turn off heat and stir in shredded cheddar cheese. Season with salt and pepper to taste.
Garnish with parsley, sour cream, or your favorite toppings if desired. Serve hot.
Notes
Adjust the spice level by adding more or less cayenne pepper.
Feel free to add additional toppings like jalapeños or avocado.
