A healthy and easy one-pot version of broccoli mac and cheese that’s packed with flavor and nutrition.

Ingredients

  • 2 cups whole milk
  • 1 1/2 cups water or broth
  • 8 oz pasta of your choice
  • 810 oz broccoli, finely chopped
  • 2 cups shredded extra sharp cheddar cheese
  • 1/4 cup plain Greek-style yogurt
  • 1 tbsp butter or ghee (optional)

Instructions

  1. Bring whole milk and water/broth to a boil in a large pot.
  2. Add the pasta and reduce heat to a simmer; cook for about 10 minutes, stirring occasionally.
  3. Stir in the chopped broccoli and cook for an additional 2-3 minutes until tender.
  4. Remove from heat and stir in the cheddar cheese and Greek yogurt until melted and creamy.
