  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 (15 ounce) can pumpkin puree
  • 1 teaspoon vanilla extract
  • For the Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, beat the granulated sugar and vegetable oil until well combined.
  4. Beat in the eggs one at a time, then stir in the pumpkin puree and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the pumpkin bars cool completely in the pan on a wire rack.
  9. While the bars are cooling, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese and butter until smooth.
  10. Beat in the vanilla extract and powdered sugar until the frosting is light and fluffy.
  11. Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over the top.
  12. Cut into bars and serve.

Notes

  • For a richer flavor, you can add chopped pecans to the batter or sprinkle them on top of the frosting.
  • Ensure your pumpkin puree is not pumpkin pie filling.
  • Adjust spices to your preference for a more or less spiced pumpkin bar.
