  • 2 cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup good cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup hot water
  • 1 cup unsalted butter (for buttercream)
  • 8 oz good quality chocolate (melted)
  • 4 cups powdered sugar
  • ½ cup heavy cream
  • 2 cups cake flour (for vanilla and strawberry layers)
  • 1 cup freeze-dried strawberries
  • ½ cup strawberry puree

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cake pans.
  2. In a medium bowl, combine buttermilk, vegetable oil, eggs, and vanilla extract.
  3. In a large bowl, whisk together flour, sugar, cocoa, baking soda, baking powder, and salt.
  4. Add the wet ingredients to the dry ingredients and mix well, then stir in hot water.
  5. Divide the batter and bake in prepared pans for 25-30 minutes.
  6. For the vanilla layer, cream together butter, sugar, and vanilla until fluffy, then add eggs one at a time.
  7. Combine cake flour, baking powder, and salt; alternate adding buttermilk and flour to the batter.
  8. Bake the vanilla layer in the prepared pans for 25-30 minutes.
  9. For the strawberry layer, cream butter, sugar, and vanilla, then add eggs and fold in strawberry puree and freeze-dried strawberries.
  10. Pour into prepared pans and bake until a toothpick comes out clean.
  11. Allow all layers to cool and then frost with buttercream made from butter, melted chocolate, powdered sugar, and heavy cream.
