A vibrant and flavorful stir-fry combining crispy tofu and earthy mushrooms with fresh vegetables, all coated in a rich, savory sauce.

Ingredients

  • 14 ounces firm tofu, pressed and cubed
  • 8 ounces mushrooms (shiitake or button), sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Assorted vegetables (bell peppers, broccoli, carrots, etc.), chopped
  • Salt and pepper, to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat until shimmering.
  2. Add the tofu cubes and cook until golden brown and crispy on all sides, about 8-10 minutes. Remove from skillet and set aside.
  3. In the same skillet, add garlic and ginger; sauté for about 30 seconds until fragrant.
  4. Toss in sliced mushrooms and other vegetables; cook until tender, about 4-5 minutes.
  5. Return the tofu to the skillet and add soy sauce and sesame oil, stirring to combine.
  6. Season with salt and pepper to taste; serve over cooked rice or noodles.

Notes

  • Adjust vegetables according to your preference.
  • For extra flavor, marinate tofu in soy sauce before cooking.
