  • 2/3 cup granulated sugar
  • Zest of 2 Meyer lemons
  • 1/2 cup fresh Meyer lemon juice
  • 2/3 cup all-purpose flour
  • 0.25 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
  2. Make the crust: Whisk flour, sugar, and salt. Add cold butter and mix until crumbly. Press into the pan and bake for 18–20 minutes.
  3. Prepare the filling: Whisk eggs, sugar, lemon zest, lemon juice, flour, salt, and vanilla until smooth.
  4. Pour the filling over the hot crust. Bake for 18–22 minutes until the center jiggles slightly.
  5. Cool completely, then refrigerate for at least 2 hours.
  6. Dust with powdered sugar, slice, and serve.
  7. For variation, swirl lemon curd into the filling before baking.
