A delicious and easy Mediterranean spinach feta cheese dish with a savory flavor profile.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 10 ounces fresh spinach, roughly chopped
  • 8 ounces feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes (optional)
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the chopped spinach and cook until wilted, about 3-5 minutes. Drain any excess liquid.
  5. Remove the skillet from heat. Stir in the crumbled feta cheese, chopped sun-dried tomatoes, sliced Kalamata olives, black pepper, and red pepper flakes (if using). Mix well to combine the Mediterranean spinach feta cheese filling.
  6. Unfold the thawed puff pastry sheet onto a lightly floured surface.
  7. Spoon the Mediterranean spinach feta cheese mixture onto one half of the puff pastry, leaving a border around the edges.
  8. Fold the other half of the puff pastry over the filling to create a sealed turnover. Crimp the edges with a fork to seal.
  9. Cut a few small slits in the top of the pastry to allow steam to escape.
  10. Carefully transfer the Mediterranean spinach feta cheese turnovers to the prepared baking sheet.
  11. Brush the tops with the beaten egg wash.
  12. Bake for 20-25 minutes, or until the puff pastry is golden brown and puffed.
  13. Let the Mediterranean spinach feta cheese crisps cool slightly before serving.
