  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Cooked rice or quinoa, for serving

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add chopped onion and cook until softened, about 3-4 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Add sliced red and yellow bell peppers and broccoli florets to the skillet.
  6. Stir fry for 5-7 minutes, or until vegetables are tender-crisp.
  7. Stir in Kalamata olives, oregano, basil, and red pepper flakes (if using). Season with salt and pepper.
  8. Cook for another 2 minutes, stirring, until heated through.
  9. Remove from heat and stir in crumbled feta cheese.
  10. Serve the Mediterranean ground beef stir fry over cooked rice or quinoa.
