Savory marinated cherry tomatoes recipe for salads, appetizers, and sides.

  • 1 pint cherry tomatoes
  • 2.5 tablespoons extra virgin olive oil
  • 1.5 tablespoons red wine vinegar or balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon fresh oregano or thyme, chopped
  • 1/2 teaspoon flaky salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 lemon zest
  • 1/8 teaspoon crushed red pepper flakes

Instructions

  1. Wash the tomatoes and pat them dry. Halve larger tomatoes if needed.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic, salt, pepper, and red pepper flakes.
  3. Add lemon zest and chopped herbs to the marinade and stir.
  4. Pour the marinade over the tomatoes in a shallow dish or jar. Toss gently to coat.
  5. Let the tomatoes marinate for 20–30 minutes at room temperature. Refrigerate for 2–4 hours or up to 24 hours if preparing ahead.
  6. Before serving, taste and adjust salt or acidity if needed. Top with shaved Parmesan or burrata if desired.
  7. Transfer to a serving dish or spoon over toast or salad.
