  • 1 cup (80 g) quick-cooking oats
  • 1 ½ cups (180 g) all-purpose flour
  • 1 cup (200 g) light brown sugar
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¾ cup (1 ½ sticks / 170 g) unsalted butter
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup (115 g) freshly squeezed lemon juice
  • 2 large egg yolks
  • 1 teaspoon lemon zest
  • ⅛ teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking pan with parchment paper, leaving overhang.
  3. In a mixing bowl, combine flour, sugar, melted butter, baking powder, and salt.
  4. Stir until the mixture resembles crumbly dough like wet sand.
  5. Press the mixture firmly into the bottom of the lined pan.
  6. Bake the crust for about 15 minutes until light golden brown.
  7. Allow the crust to cool slightly while preparing the lemon filling.
  8. In a separate bowl, whisk together eggs, lemon juice, powdered sugar, lemon zest, and salt.
  9. Pour the lemon filling over the warm crust, spreading it evenly.
  10. Bake for an additional 20 to 25 minutes until filling is set with a slight jiggle.
  11. Cool the bars in the pan for 30 minutes, then refrigerate for at least 2 hours.
  12. Lift the bars out using the parchment overhang and slice into squares.
