  • 3 cups cooked turkey, shredded or diced
  • 2 cups prepared stuffing (leftover or store-bought)
  • 2 cups mashed potatoes
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 can cream of chicken soup (or cream of mushroom)
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese, divided
  • Salt and black pepper, to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a bowl, combine turkey, mixed vegetables, cream of chicken soup, sour cream, milk, and half of the cheese. Season with salt and pepper.
  3. Spread stuffing across the bottom of the dish. Add turkey mixture on top. Spread mashed potatoes over evenly.
  4. Sprinkle remaining cheese over the potatoes.
  5. Cover with foil and bake 25 minutes. Remove foil and bake another 10-15 minutes until bubbling and golden.
  6. Cool slightly before serving. Garnish with parsley if desired.
