Easy Korean Potatoes are a crispy, savory, and flavorful side dish that’s perfect for complementing any Asian meal.

Ingredients

  • 1 lb baby potatoes (or regular potatoes, cut into bite-sized pieces)
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 2 teaspoons sugar
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon gochugaru (Korean chili flakes) or paprika
  • 1 tablespoon sesame seeds
  • 12 green onions, sliced for garnish
  • Salt and pepper, to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 12-15 minutes. Drain and set aside.
  2. Preheat the oven to 400°F (200°C). Toss boiled potatoes with sesame oil, then roast for 20-25 minutes, or until golden and crispy.
  3. In a medium bowl, combine soy sauce, sugar, minced garlic, rice vinegar, and gochugaru. Stir well.
  4. Once the potatoes are roasted, toss them with the sauce until well coated.
  5. Sprinkle with sesame seeds and sliced green onions. Serve immediately as a side dish.
