A magical combination of classic pot roast and French onion soup flavors, this dish is tender, juicy, and full of savory goodness.

Ingredients

  • 34 pounds beef chuck roast
  • 2 large onions, sliced
  • 1 cup beef broth
  • 1 packet onion soup mix
  • 23 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper, then sear it on all sides until golden brown.
  2. Place the sliced onions in the bottom of your slow cooker, then add the seared roast on top.
  3. In a bowl, mix together beef broth and onion soup mix, and pour over the roast.
  4. Sprinkle minced garlic on top.
  5. Cover the slow cooker and cook on low for 8-10 hours.
  6. Once done, shred the meat with two forks and mix with onions and broth.
  7. Garnish with fresh thyme or parsley before serving.
