  • 1 box (240 g) Jiffy cornbread mix
  • 1 cup (240 ml) milk
  • 2 large eggs
  • 1 cup (120 g) shredded cheddar cheese
  • 1 can (15 oz or 425 g) corn
  • 1 cup (150 g) diced bell peppers
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a 9×13 inch (23×33 cm) baking dish with oil or non-stick spray.
  3. In a large bowl, combine Jiffy cornbread mix, milk, and eggs.
  4. Whisk until just combined; a few lumps are fine.
  5. Fold in shredded cheddar, drained corn, diced bell peppers, garlic powder, and onion powder.
  6. Season with salt and pepper to taste.
  7. Pour the mixture into the prepared baking dish and spread evenly.
