Spicy & Cheesy Jalapeño Cheese Squares for the Perfect Party Bite

  • 4 large eggs
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup diced pickled jalapeños (drained)
  • 2 tablespoons jalapeño brine (from the jar)
  • ½ cup finely chopped onion
  • 1 teaspoon garlic powder
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Set oven to 350°F (175°C) and grease or line a 9×9-inch baking dish with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, salt, and garlic powder.
  3. In a large bowl, beat eggs and mix in melted butter and jalapeño brine.
  4. Stir in cheddar, Monterey Jack, diced jalapeños, and chopped onion until coated.
  5. Fold the dry ingredients into the wet mixture just until combined.
  6. Pour into prepared baking dish and bake for 30–35 minutes, or until golden and set.
  7. Let cool for 10–15 minutes before cutting into squares. Serve warm or at room temperature.
