- ½ cup all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ cup diced pickled jalapeños (drained)
- 2 tablespoons jalapeño brine (from the jar)
- ½ cup finely chopped onion
- 1 teaspoon garlic powder
- 2 tablespoons unsalted butter, melted
- Set oven to 350°F (175°C) and grease or line a 9×9-inch baking dish with parchment paper.
- In a medium bowl, whisk together flour, baking powder, salt, and garlic powder.
- In a large bowl, beat eggs and mix in melted butter and jalapeño brine.
- Stir in cheddar, Monterey Jack, diced jalapeños, and chopped onion until coated.
- Fold the dry ingredients into the wet mixture just until combined.
- Pour into prepared baking dish and bake for 30–35 minutes, or until golden and set.
- Let cool for 10–15 minutes before cutting into squares. Serve warm or at room temperature.
