2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
1 potato, peeled and diced
4 cups vegetable broth
1 can (14.5 oz) diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
2 cups cooked pasta (optional)
Fresh parsley for garnish
Instructions
In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent.
Add the carrots, celery, and potato. Cook for about 5 minutes until they start to soften.
Pour in the vegetable broth and diced tomatoes. Stir in the oregano, basil, salt, and pepper.
Bring to a boil, then reduce the heat and simmer for about 20-30 minutes, until all vegetables are tender.
If using, add cooked pasta to the soup and heat through.
