  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 potato, peeled and diced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups cooked pasta (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent.
  2. Add the carrots, celery, and potato. Cook for about 5 minutes until they start to soften.
  3. Pour in the vegetable broth and diced tomatoes. Stir in the oregano, basil, salt, and pepper.
  4. Bring to a boil, then reduce the heat and simmer for about 20-30 minutes, until all vegetables are tender.
  5. If using, add cooked pasta to the soup and heat through.
  6. Serve hot, garnished with fresh parsley.
