Ingredients

Scale
  • 1 teaspoon olive oil
  • 1 to 1 1/2 pounds boneless, skinless chicken breasts or thighs (diced into 1-inch pieces)
  • 2 teaspoons Italian seasoning (divided)
  • Salt to taste
  • Pepper to taste
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/2 cup diced onions
  • 1/4 cup diced sun-dried tomatoes
  • 3 garlic cloves (minced)
  • 1/4 cup flour
  • 2 tablespoons tomato paste (optional)
  • 68 cups chicken broth
  • 6 oz pasta (Italian small shells recommended)
  • 1 cup heavy whipping cream
  • 1/21 cup grated Parmesan Reggiano cheese
  • 2 1/23 cups fresh spinach

Instructions

  1. Heat the olive oil in a large soup pot or Dutch oven over medium-high heat. Add the diced chicken and 1 teaspoon of Italian seasoning, along with a sprinkle of salt and pepper. Cook until the chicken is browned on all sides, about 4-5 minutes.
  2. In the same pot, add the onions, carrots, celery, sun-dried tomatoes, and minced garlic. Sauté until the vegetables are translucent, about 3-4 minutes.
  3. Sprinkle the flour over the mixture and stir well to combine. If using, stir in the tomato paste.
  4. Gradually whisk in the chicken broth, stirring constantly to avoid lumps and to deglaze the bottom of the pot.
  5. Bring the mixture to a rolling boil and add the pasta along with the remaining teaspoon of Italian seasoning. Season with salt and pepper to taste.
  6. Cover the pot, lower the heat, and simmer for about 20 minutes, or until the chicken is cooked through and the pasta is al dente. (Alternatively, cook pasta separately and add later.)
  7. Stir in the heavy cream, fresh spinach, and grated Parmesan cheese. Let the soup simmer for an additional 5 minutes.
  8. Taste and adjust seasonings with more salt and spices if necessary.
  9. Ladle the creamy Tuscan chicken soup into bowls, garnish with additional Parmesan or fresh herbs, and serve with a crusty baguette.

Notes

  • For a vegetarian version of this creamy Tuscan chicken soup, replace the chicken with extra mushrooms and use vegetable broth.
  • Use gluten-free pasta or omit it for a low-carb option.
  • Consider adding red pepper flakes for a spicy kick.
  • Fresh basil or parsley can enhance the flavors when added just before serving your creamy Tuscan chicken.
  • For an even more luscious texture, mix in some cream cheese or gouda.
  • Leftovers of this creamy Tuscan chicken soup can be stored in an airtight container in the fridge for up to 3 days.
  • If freezing, cook pasta separately to maintain texture, as pasta may change texture after freezing.
