  • 1/2 cup (100 g) light brown sugar, optional
  • 2 large eggs, room temperature
  • 2 tablespoons Irish cream liqueur
  • 2 1/2 cups (315 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped toasted pecans or almonds, optional
  • 12 tablespoons coarse sugar for rolling, optional
  • 1 tablespoon powdered sugar for dusting after cooling, optional

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment or a silicone mat. In a large bowl, beat the softened butter with the granulated sugar (and the brown sugar, if using) until pale, fluffy, and ribbons form when you lift the mixer. This should take about 3-4 minutes on medium speed.
  2. One at a time, beat in the eggs until fully incorporated and glossy. Stir in the Irish cream liqueur (or vanilla, if you’ve swapped for a non-alcoholic version).
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low just until the dough comes together. If you’re using nuts, fold them in now.
  5. Roll dough portions in coarse sugar before baking, or drop rounded tablespoons of dough onto the prepared sheets.
  6. Chill the dough for at least 30 minutes (or up to 2 days).
  7. Bake for 10-12 minutes, rotating the sheets halfway through.
  8. Remove from the oven and let the cookies rest on the baking sheet for 2-3 minutes before transferring to a wire rack.
  9. Cool completely before storing in an airtight container.
